Our Rum

Our signature DOUBLE BARREL blend is created by first expertly sourcing aged component rums from Barbados, Jamaica, the Dominican Republic and Panama. These rums are blended together and left to rest in a marrying cask in London for a further period of six months before being carefully bottled.

Following the traditions set by London's merchant blending houses of the 17th, 18th and 19th Centuries, we do not colour or sweeten any of our rums. What you see is a natural product of distillation and cask maturation.

NOTES

On the nose, you will find an alluring vanilla sweetness with flashes of vibrant tropical fruit and a wonderful toasty oak character.

The palate is mouth-coating, warming and generous with soft notes of vanilla, more of that tropical fruit and some wine-like notes created through the cask maturation process. Toasty oak returns on the finish alongside sweet vanilla and hints of pastry cream.

THE FULL PICTURE

The merchant rum blenders of the 17th, 18th and 19th Century depended on relationship, transparency and trust to ensure the continued success of their proprietary blends - and we are no different. Our rum is created through a complex, traditional three-stage process involving initial maturation, intermediate blends and marrying. Visit us at the Sign of the Post & Hound to find out more.
